Prep Time: 20 minutes
Serves: Four
- 1 1/2 tbsp semolina(suji)
- 200 g flour
- 3 tbsp oil
- 3 tbsp sugar
- salt, to taste
- 3/4 cup water
- 1/2 tbsp citric acid
- 1tbsp fruit salt
- 1 tbsp soda bicarb
- juice of 1/2 a lemon
For The Tempering:
- 1/2 tbsp mustard seeds
- 1/2 tbsp sesame seeds
- 2 tbsp oil
- a pinch of asafoetida
- 3 green chillies, chopped
- 5 curry leaves
- 50 ml water
For The Garnishing:
- coriander leaves
- grated coconut
Method
Mix together semolina, flour, half the oil, sugar, salt and half the water. Set aside.
Prepare the steamer and grease a steamer plate.
In another bowl, mix the remaining oil and water together and add all other ingredients.
Add to the flour mixture, and mix lightly in a circular movement, till all ingredients are combined.
immediately pour into the greased plate and put in the steamer. Steam for 15 minutes. Remove
from heat and set aside to cool. Temper mustard and sesame seeds in the oil. When they
splutter, add the remaining ingredients. Pour over Dhokla. Top with the garnishing, cut into
squares and serve with chuteny.
