Lychee and Pomegranate Granita

Prep Time: 10 minutes
Freezing Time: 60 minutes or more
Serves: four

200 g tinned lychees, pureed
160 ml coconut milk
50 ml pomegranate juice
lime juice to taste

Method
Mix all the ingredients together in a bowl.
Pour the mixture into a freezer safe dish and allow to set in the freezer for at least an hour.
When the mixture is set, scrape lengthwise with a fork.
Put the ice shavings in a bowl and serve immediately, garnished with some lime slices and pomegranate.
