Cooking Time: 20 minutes
Serves: Four
- 400 g whole wheat penne
- a pinch of salt
- 50 ml olive oil
- 80 g onions, chopped
- 20 g garlic, chopped
- 450 ml tomato sauce
- salt and pepper, to taste
- 20 g basil leaves, torn
- 2 tbsp oregano
- 120 g parmesan cheese, grated
- 200 g broccoli florets, parboiled
- 80 g butter, melted
- 1 1/2 tbsp mixed herbs( parsley,thyme,dill)
Boil the penne in plenty of hot water, salt and 5ml of olive oil, for 10 minutes.
Heat the remaining oil in another pan and saute the onion and garlic.
Add salt, pepper, basil, oregano, grated parmesan and boiled broccoli.
Add the cooked penne, stir in the butter.
Serve hot, garnished with mixed herbs.
